Seven Minute Frosting and Whipped Cream Frosting
My mom often baked a heart shaped chocolate cake for Valentine's Day and frost with a “Seven Minute” frosting. It’s one of my favorites, not too sweet light and fluffy.
Seven Minute Frosting
2 large egg whites
2 large egg whites
1 1/2 cup sugar
1/3 cup water
1 Tablespoon light corn syrup
1 teaspoon vanilla
1/3 cup water
1 Tablespoon light corn syrup
1 teaspoon vanilla
Pinch of salt
Combine ingredients with a pinch of salt in a metal bowl set over a saucepan of simmering water and beat with a hand electric mixer a high speed until frosting is thick and fluffy, 6-7 minutes. Remove bowl from heat and continue to beat until slightly cool. Use frosting the day it is made.
Here is a great Whipped Cream Frosting that is quick and soooo good!
2 cups heavy whipped cream
1 small box (3.3 oz) White Chocolate instant pudding mix
1/3 cup powder sugar
In a cold stainless steel bowl whip cream until peaks form. Add powder sugar and continue to mix on high. Just before you get to stiff peaks add in the pudding mix. Lower to slow speed and continue to mix the whipping cream and the pudding Watch carefully as it will set up fast. When the frosting starts to come together stop the mixer and scrape the down the sides. If the frosting is too thick add a little milk 1 teaspoon at a time.
