Mexican Chopped Salad with Cilantro Dressing
Not a boring salad by any means! This is packed full of great flavor and textures served with a lime cilantro dressing. It's a great salad to have on a warm summer night or a quick weekday dinner using leftover chicken. I have made the salad without the chicken and it was still very satisfying.
Ingredients:
1 large head romaine lettuce chopped (8 cups)1/2 large red bell pepper or 1 medium chopped
1/2 large green bell pepper or 1 medium chopped
1 cup red onion chopped
1 can (15 oz) black beans drained and rinsed
1 can (15 oz) corn or frozen, thawed
2 roma tomatoes diced
1/4 cup chopped fresh cilantro
1 large ripe avocado chopped
1 cup grilled chicken breast cubed
Cilantro Dressing
1/2 bunch cilantro including the stems (there is a lot of flavor in the stems don't let it go to waste)
1/2 cup mayonnaise
1/4 cup olive oil
2 Tablespoons fresh lime juice
2 cloves garlic
1 teaspoon apple cider vinegar
1 Tablespoon honey
In a blender combine the dressing ingredient and pulse until smooth, pour into a bottle or small mason jar for serving, keep refrigerated.
