Chicken Chow Mein





If you're looking for a meal that can be on the table in 30 minutes this is it.  It's packed with great flavor and will be a family favorite. It's made with fresh vegetables, Top Ramen noodles, and saute chicken in a simple chow mein sauce.



Ingredients:

2 boneless chicken breasts sliced thin
1 Tablespoon vegetable oil to saute vegetables
11/2 cups shredded cabbage
1 1/2 cups carrots shredded or julienne
2 cups broccoli florets
3 ribs celery sliced at an angle
4 green onions sliced at an angle (whites and greens)
1 small white/yellow onion sliced thin
2 cloves garlic minced
6 packages of Top Ramen noodles - discard seasoning packet

Sauce:

1/4 cup soy sauce or coconut aminos
1 1/2 teaspoon sesame oil
1 Tablespoon oyster sauce
2 teaspoons fresh grated ginger

Cook noodles for 3  minutes, drain, rinse and sprinkle with a little sesame or vegetable oil to prevent the noodles from sticking.  If you would like the texture of fried noodles you can add some oil to a wok or hot pan and fry the noodles a little just before adding the vegetables and sauce.

In a small bowl whisk together the sauce ingredients and set aside.  In a wok or large fry pan heat oil and stir in chicken, season with salt and pepper, stir fry until just cooked through.   Add in carrots, onion, celery, broccoli, cabbage
and half of the green onions, stir fry for 1-2 minutes adding in garlic for the last 30 seconds.

Add in the sauce an noodles and cooke for 1-2 minutes until heated through.  Transfer to a shallow serving bowl and garnish with the remaining green onions.  Serve immediately.
