Fettuccine Alfredo
There are so many recipes out there for Alfredo sauce. Some use flour to help thicken the sauce with a combination of milk and heavy cream. While others use cream cheese along with the heavy cream. I have also just used a good quality parmesan, butter, and pasta water to make the sauce. To add brightness, add lemon zest and juice to the pasta. It's a matter of taste.I've always used just a few ingredients, cream, parmesan, butter and a dash of nutmeg.
Alfredo Sauce Ingredients
2 cups heavy cream1/4 cup butter
2 cups Parmesan cheese
dash of nutmeg
Parsley for garnish
Heat heavy cream over low heat, add butter and whisk util melted. Sprinkle in cheese and stir to incorporate. Season with a dash of nutmeg.
In a large pot cook pasta in salted boiling water. Drain pasta reserving some liquid. Add pasta to sauce and toss until coated. If the sauce is too thick add some of the pasta water to thin.
Transfer pasta to warm serving dish and top with additional grated cheese and parsley. Serve immediately.
