Lazy Daisy Oatmeal Cake



This is another one from my childhood.  I think i liked it because of the coconut.  Such a simple dessert and perfect for a cold evening served warm with a little whipped cream or even a scoop of vanilla ice cream



Ingredients:

1 1/4 cup boiling water
1 cup quick oats
1/2 cup butter softened
1 cup granulated sugar
1 cup firmly packed brown sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Frosting:

1/4 cup melted butter
1/2 cup brown sugar
3 Tablespoons half and half
1/3 cups chopped walnuts
3/4 cups coconut.


For the cake, pour water over the oats and let stand for 20 minutes.  Meanwhile blend butter and sugar until fluffy mix in eggs and vanilla.  Add to oatmeal and mix well.  Sift together flour, baking soda, salt and spices, add to wet ingredients and combine.  Pour mixture into a well greased & floured 9" square baking pan.

Bake 40 - 50 minutes.  Mix the topping ingredients and spread on top of warm cake.  Place under broiler until bubbly and slightly golden in color.
