Pasta with Mushrooms






















Ingredients

1-pound mixed mushrooms or portabella mushrooms
3 Tablespoons olive oil
1 clove garlic
1 – 2 small diced red chilies
Salt and pepper
1/2 lemon juiced
1 handful fresh parsley roughly chopped

2 oz butter
Parmesan cheese

1 pound Spaghetti or Tagliatelle Pasta

Brush off dirt from mushrooms and slice thinly. In a heavy saucepan add oil and adds mushrooms.  Let them fry fast tossing once or twice.  Add garlic and chili with a pinch of salt.  Continue to cook the mushrooms for 4-5 minutes tossing regularly.  Turn off the heat and add lemon juice, toss and season to taste with salt and pepper.
Cook the pasta in boiling salted water until al dente.  Drain pasta and add mushrooms, the parmesan cheese parsley and butter.  Toss coating pasta with mushrooms.

Garnish with more cheese and parsley


If you like more herb flavor add, 1/2 cup basil, 2 Tablespoons thyme and 1 Tablespoon sage when garlic and chili is added.
