Pepper Steak
Pepper Steak is such an easy weekday dinner. Serve over rice and it's a complete meal. When I was first married, we had pepper steak quite often, it was quick and easy.

1 pound of beef sirloin
2 Tablespoons of oil
2 medium peppers (any color) cut into strips
2 medium onions or 1 large
1-2 cloves minced garlic
1/4 cup soy sauce
1/3 cup water
2 Tablespoons cornstarch
Cooked rice
Cut beef across the grain into thin strips. Heat 1 Tablespoon oil in a skillet, add beef and brown for 5-7 minutes. Once the meat has browned remove from pan and set aside. Add the other Tablespoon of oil into the same skillet along with the garlic, onions and peppers stir fry for a few minutes. Remove the vegetables from the pan and set aside. Add meat back into the pan along with the soy sauce and water, cover and simmer for 15 minutes. A few minutes before serving dissolve the cornstarch with a little water add to meat and cook for a few minutes until thicken. Add to the vegetables and cook for a few minutes to warm them up. Serve over rice.
