Dinner Rolls
This recipe is adapted from “How Does She Do It”. They are quick and absolutely delicious! I’ve used the recipe to make cinnamon rolls making one adjustment, I increase the sugar to 1/2 cup.
This past Thanksgiving, I offered to make rolls. My 9-year-old granddaughter Hallie wanted to help make the rolls. We had a sleepover the night before Thanksgiving so we could make rolls after I got home from work. I let Hallie take charge and she did an amazing job. I was there to help measure and mix if needed. After the ingredients were mixed Hallie turned the dough onto a floured surface and began to knead. After the first rise I helped her roll out and cut into triangles. She buttered the rolls and rolled into crescent. Once the rolls rose for the second time they were baked and brushed with butter
Ingredients
3/4 cups of milk
1/4 cups Sugar
1 egg
1 1/2 teaspoon salt
1 Tablespoons yeast
1 cups of warm water
4 1/2 - 5 cups of all-purpose flour
1/2 cup butter
Instructions
Scald milk in a microwave safe bowl for about 2 minutes. Add in sugar and 1/4 cup of butter, stir until butter is melted. Add in water to cool it down before adding in yeast. If the liquid is too hot it will kill the yeast. Add in the 1 egg and salt. Using a fork or wooden spoon, gradually stir in flour. I would add 2 cups at a time, stirring in between. I use my stand mixer with the dough hook.
The dough will be dense and sticky, and may be hard to stir, you can use your hands to incorporate the rest of the flour if needed. Be sure not to add too much flour. Then smooth the dough out and cover the bowl with plastic wrap. Leave it in a warm place and let it rise until it has doubled in size. This normally take between 1 1/2 - 2 hours.
Cover your working space with flour to prevent the dough from sticking. Dump your dough out and divide in half and form into a ball. Using one ball of dough at a time: roll the dough into a circle on a floured counter. Once it is rolled out spread the top with butter from edge to edge, about 2 Tablespoons. Cut the dough into quarters using a pizza cutter. Then cut each quarter into 3 pieces. You should end up with 12 triangles from each circle of dough. Roll the dough starting at the wide edge.
Tuck the tail of the triangle under the roll and place it on the buttered cookie sheet. You will make 3 rows, with 8 rolls per row. This will give you 24 rolls per pan.
Pre-heat your oven to 350 degrees. Place the pans of rolls in a warm place to let them rise. Once they are touching and full in size, cook 10 – 15 minutes, it may take longer depending on how hot your oven is.
While they are still hot and fresh out of the oven run a stick of butter over the tops of the rolls for a delicious buttery glaze.
