Pecan Crusted Chicken - Green salad with Honey Dejon dressing

 


Ingredients:

1 stick unsalted butter
1/4 cup Dijon mustard
3 chicken breasts, halved lengthwise ad halved again
1/2 lb. coarsely chopped pecans
1/3 cups oil
1 cup sour cream
salt and pepper

Melt butter, removed from heat and add in mustard.  Place chicken between wax paper and flatten to 1/2 inch.   Dip chicken in butter and mustard mixture, roll in pecans.  Coat the chicken generously with the pecans.   
With the oil sauté chicken in small batches until brown about 3 minutes per side.  Remove chicken and keep warm in 200-degree oven.   Pour off oil from pa and any pecan bits. Deglazed the pad with sour cream and remaining mustard mixture.  Spoon sauce over warm chicken.  

Serves 6 

Serve with fresh sauté vegetables or your favorite green salad with the below dressing and crusty French bread.
 

Dijon Honey Mustard Dressing

1/3 cup olive oil
3 Tablespoons honey
3 Tablespoons apple cider vinegar
1 Tablespoon Dijon Mustards
Salt and pepper to teste
