Warm Ranch Potato Salad


When my daughter Jennifer was pregnant with her fourth child she wanted to know the sex of the baby.  After 3 boys we were all hoping for a girl and it was, our sweet Hallie was born in February the day after Valentine's Day.

After 3 boys Jennifer's friends decided she needed a Baby Shower, it was a wonderful day.  The boys had fun looking at all the girl stuff they even tried on headbands.  The food was simple and wonderful, several different salads.  One in particular was amazing and I had to get the recipe, warm ranch potato salad.  This has been a winner with our family and friends.  I'm always asked to bring Potato Salad to summer gatherings, this one and another recipe I will share later.  You won't believe how easy this is to make and the flavor is fantastic.

Ingredients:

2 pounds red potatoes cut into bit size pieces
Bacon - cooked and crumbled
Green Onions - chopped
Homemade Ranch Dressing - just follow the directions on the package


Place the potatoes in a pot filled with cold water and 2 teaspoons of salt.  Bring to a boil and cook until tender.  Immediately drain and allow to slightly cool.

While the potatoes are cooking make the dressing. Add the dressing to the slightly cooled potatoes to allow them to absorb some of the ranch goodness.  Refrigerate for 4 hours up to 24.

Right before serving add the green onions and bacon and toss to combine.  The salad can be served at room temperature.
